Imagine boarding a private helicopter and flying inland across Jalisco to land inside the walls of an artisanal distillery in the Tequila Valley, where our expert guide is waiting to lead guests on a personalized tour of the agave fields and distillery grounds. From horseback riding through the neat rows of carefully cultivated agave plants to watching the jimadores harvesting and trimming each “pina” with precision, plus stops in the barrel room, bottling line, and tasting bar, this interactive experience culminates in a celebratory tequila toast at a panoramic lookout point highlighting the spectacular views of the entire Tequila Valley and Western Sierra Madre mountain range. Guests savor traditional botanas (snacks) and custom tequila cocktails crafted by one of Guadalajara’s premiere mixologists, then sit down to a sumptuous catered Jaliscan luncheon with a full mariachi band to add to the festivities. Sorry, Starbucks-- when it comes to getting your caffeine fix hot and fresh, the routine of walking to the corner coffee shop will leave you lukewarm after you hear about this venti-sized "coffee run" adventure. In fact, that siren song so familiar to the coffee aficionados of the world will fall on deaf ears as soon as you climb aboard a private helicopter and head toward the hills to tour a 500-acre coffee plantation located at the base of an active volcano in Colima, Mexico. In a quest to start your day with the most exquisite cup of coffee imaginable, you'll fly to an expansive luxurious highland estate which-- in addition to its coffee production-- boasts its own working ranch that supplies the property with a wealth of organically grown fruits, vegetables, cheeses and meats. Almost meditative in nature, this adventure is an interactive exploration of the entire process from seed to cup-- from plucking the bright, deep red coffee cherries from the branches in the morning sunshine to watching as the beans are washed and dried, then roasted, ground, and brewed to perfection in the roasting house. Coffee flights allow each guest to slowly and reverently savor five different varieties and roasts before selecting which roasted beans you will scoop and bag for your own personal enjoyment at home. Please don’t mistake this ubiquitous Super Bowl snack with what we have in mind... this interactive epicurean experience re-defines the concept of “field trip” as you and friends set off on a flying farm-to-table adventure across Mexico’s heartland for the freshest ingredients imaginable. This is not your average drive to the supermarket, but an aircraft-assisted agricultural tour-de-force. Gather all the ingredients for your guacamole on your progressive produce hunt: pluck vine-ripened tomatoes in one region, shiny green jalapeños in another, lift off again for limes, stop to scoop up flaky Mexican sea salt in Cuyutlan, pull sweet onions from the dirt, then finally touch down at a secluded avocado orchard to hand-pick the most integral part of this delicious concoction. Almost like magic, you find a makeshift field kitchen with lava rock molcajetes and brightly-colored aprons set out for the ultimate hands-on culinary class. Out from the shade of an avocado tree steps a well-known regional chef who puts his toque aside to lead this group of star-struck students through the steps of a secret family recipe for guacamole handed down from his great-grandmother. Whether you depart from Cancun or Merida airport, this excursion will allow you to leave “civilization” behind to immerse yourself in the original world of chocolate-- starting with a tour of a cacao plantation nursery and orchards boasting 50,000 trees and active participation in the harvesting of the pods. With your cacao beans in hand, you'll be transported above the dense jungle to a breathtaking former henequen hacienda where you will be welcomed warmly with a delicious hibiscus flower beverage and invited to don traditional Mayan dress-- a colorful embroidered “huipil”-- before descending down through a candle-lit grotto into the Spa. There you will participate in an authentic cacao ceremony led by a Mayan shaman who will lead you through a sacred blessing and then invite each to partake of the raw ceremonial-grade cacao, which has been used for centuries to unlock euphoric states, release negative emotions, and connect to pure heart energy. When the ceremony concludes, you could opt for a relaxing spa treatment or savor the tranquility of swimming in the clear turquoise waters of the completely private cenote. When you feel sufficiently refreshed to emerge from the spa, you will be treated to a gloriously sumptuous and festive Mexican luncheon served at the hacienda. This excursion could culminate with a tequila tasting and then return late in the afternoon; alternatively, you might choose to spend the night at the hacienda and depart the following morning.
